Shrimp Tacos and Avocado Sauce


Don't let the word Tacos fool you, this is as far from Mexican as it gets. But I like to take the word Taco as liberally as everybody else takes the word Sandwich. A taco is basically any type of deliciousness enclosed in a tortilla or similar flatbread, regardless of composition. This is where the beauty of the taco lays, the possibilities. So, even if you are a Taco Purist that only consumes authentic "al Pastor" tacos made on a street cart, or you are as liberal as I am, if you give this a chance, you are gonna love it. Get your ass to the kitchen for a few minutes and get this "Shrimp and Pineapple Tacos with Avocado Sauce" going, you won't regret it. 

A sexy taco.


You will need:

  • Shrimp: Any type of shrimp or prawn. Peel them and remove the intestines.
  • Onion: Half a medium sized onion, sliced
  • Garlic: One clove thinly sliced.
  • Salt and Pepper: Duh!
  • Pineapple: A few slices cut into chunks.
  • Avocado: 1 ripe and delicious avocado.
  • Greek Yoghurt: About a cup should be enough.
  • Lemon: 1 medium sized lemon, or lime.
  • Lettuce: Enough for serving.
  • Tortillas: This time I'm using 8 flour tortillas, but you can use whatever.

The Ingredients
 
Let's get to it!

  1. In a little bit of oil, sauté the onions and garlic until they are soft and aromatic. Add some salt and pepper.
  2. Add the shrimp and sauté for a couple of minutes until they start changing color.
  3. Add the pineapple and sauté until it starts to soften and the shrimp are fully cooked. Set aside.
  4. Blend the avocado, Greek yoghurt and the juice of half a lemon with salt and pepper, this will be your sauce. Put it in a nice bowl .
  5. Get your tortillas and start warming them up on both sides until they are soft and manageable.
  6. Start stuffing your tacos. Set up a nice platter
  7. Serve with the avocado sauce, some lettuce and lemon.
  8. Attack and destroy them! You are welcome.
