Don't
let the word Tacos fool you, this is as far from Mexican as it gets. But I like
to take the word Taco as liberally as everybody else takes the word Sandwich. A
taco is basically any type of deliciousness enclosed in a tortilla or similar
flatbread, regardless of composition. This is where the beauty of the taco
lays, the possibilities. So, even if you are a Taco Purist that only consumes
authentic "al Pastor" tacos made on a street cart, or you are as
liberal as I am, if you give this a chance, you are gonna love it. Get your ass
to the kitchen for a few minutes and get this "Shrimp and Pineapple Tacos
with Avocado Sauce" going, you won't regret it.

You will need:
- Shrimp: Any type of shrimp or prawn. Peel them and remove the intestines.
- Onion: Half a medium sized onion, sliced
- Garlic: One clove thinly sliced.
- Salt and Pepper: Duh!
- Pineapple: A few slices cut into chunks.
- Avocado: 1 ripe and delicious avocado.
- Greek Yoghurt: About a cup should be enough.
- Lemon: 1 medium sized lemon, or lime.
- Lettuce: Enough for serving.
- Tortillas: This time I'm using 8 flour tortillas, but you can use whatever.

Let's get to it!
- In a little bit of
oil, sauté the onions and garlic until they are soft and aromatic. Add
some salt and pepper.
- Add the shrimp and sauté for a
couple of minutes until they start changing color.
- Add the pineapple and sauté until it
starts to soften and the shrimp are fully cooked. Set aside.
- Blend the avocado, Greek yoghurt and
the juice of half a lemon with salt and pepper, this will be your sauce.
Put it in a nice bowl .
- Get your tortillas and start warming
them up on both sides until they are soft and manageable.
- Start stuffing your tacos. Set up a
nice platter
- Serve with the avocado sauce, some
lettuce and lemon.
- Attack and destroy them! You are
welcome.
